Chocolate Raspberry Cake


It's a not so secret secret that I have joined Weight Watchers. Since then, I have been trying to think up some healthier recipes, especially desserts.
I came up with this topping for a cake that is tasty and technically 0 points plus (when added to the cake, it bumps the total cake points up one point). A piece of cake (1/12th) is 5 points plus and worth every point.

Chocolate cake

1 box Betty Crocker chocolate fudge cake mix
1 cup water
1/3 cup applesauce
5 egg whites

Follow directions on back of box substituting the above ingredients for the ones suggested on the box. Reduce baking time by 1-2 minutes.

Raspberry Topping

.3 oz sugar free raspberry Jello
8 oz Cool Whip free
fresh raspberries

Mix together jello powder and Cool Whip while cake is baking. Refrigerate until cake is cool.
Frost cake with topping and garnish with fresh raspberries.
Refrigerate until ready to serve.

Over the weekend, I made this again using sugar free strawberry Jello and fresh strawberries. It was also very good.

This is a yummy, light dessert that everyone will enjoy.
